Ingredients
- 4 tsps marmalade
- 200g canned mandarin oranges
- 100g Silver spoon caster sugar
- 100g Light margarine
- 2 eggs
- 1 tsp vanilla extract
- 100g plain flour
- 1 tsp baking powder
Cooking Instructions
- Preheat the oven to 150C, 300F, Gas Mark 2. Lightly grease a 20cm round sponge mould.
- Spread the base of the mould with the maramalade and dot with the mandarin oranges.
- Using an electric whisk, mix together the remaining ingredients until smooth. Spread the mixture over the marmalade, evening it out with the blade of a knife.
- Bake in the centre of the oven for 25-30 minutes until firm to the touch.
- Remove from the oven and turn out onto a serving plate, Serve hot or cold with virtually fat-free fromage frais.
