Mandarin marmalade pudding

Ingredients

  • 4 tsps marmalade
  • 200g canned mandarin oranges
  • 100g Silver spoon caster sugar
  • 100g Light margarine
  • 2 eggs
  • 1 tsp vanilla extract
  • 100g plain flour
  • 1 tsp baking powder

Cooking Instructions

  1. Preheat the oven to 150C, 300F, Gas Mark 2. Lightly grease a 20cm round sponge mould.
  2. Spread the base of the mould with the maramalade and dot with the mandarin oranges.
  3. Using an electric whisk, mix together the remaining ingredients until smooth. Spread the mixture over the marmalade, evening it out with the blade of a knife.
  4. Bake in the centre of the oven for 25-30 minutes until firm to the touch.
  5. Remove from the oven and turn out onto a serving plate, Serve hot or cold with virtually fat-free fromage frais.
