Light Fruit Cake

A beautiful moist and rich fruit cake recipe, light on fat and calories. This recipe saves nearly a hundred calories per slice and over 10g of fat when compared to a shop bought version.

Light fruit cake

  • 110g light spread
  • 100g soft dark brown sugar
  • 2 eggs, beaten
  • zest of an orange
  • 1 banana, mashed
  • 200g dried mixed fruit
  • 225g self-raising flour
  • 2 tsp mixed spice
  • 1 tsp ground cinnamon

Cooking Instructions

  1. Preheat the oven to 150C, 300F, Gas Mark 2.
  2. Lightly grease and line a 20cm (10in) round cake tin.
  3. Cream together the spread and sugar in a large bowl, using a whisk. Gradually mix in the egg, orange and banana. Add the fruit, flour and spice, mixing together with a wooden spoon and combining well.
  4. Transfer to the prepared tin and bake in the centre of a preheated oven for 1-1 ½ hours, until the blade of a knife comes out clean when inserted into the thickest part.
  5. Allow to cool and serve.

This cake is delicious, really moist and packed full of juicy fruit in each bite. Unlike some low fat recipes, one portion (1/8) is more than enough to make you feel like you've had a nice big satisfying chunk.

Always looking for nice sweet foods think this will do the trick. Will make it and take it into work. The demonstration shows using the mashed banana first but I guess it doesn't matter it still comes out ok

I don't think I could be a chef - I'd be about 20 stone if I was! The cake looks soooo good! - I'd have to freeze it as no one else likes fruit cake and it wouldn't last long if I didn't...
