Ingredients
- 110g light spread
- 100g soft dark brown sugar
- 2 eggs, beaten
- zest of an orange
- 1 banana, mashed
- 200g dried mixed fruit
- 225g self-raising flour
- 2 tsp mixed spice
- 1 tsp ground cinnamon
Cooking Instructions
- Preheat the oven to 150C, 300F, Gas Mark 2.
- Lightly grease and line a 20cm (10in) round cake tin.
- Cream together the spread and sugar in a large bowl, using a whisk. Gradually mix in the egg, orange and banana. Add the fruit, flour and spice, mixing together with a wooden spoon and combining well.
- Transfer to the prepared tin and bake in the centre of a preheated oven for 1-1 ½ hours, until the blade of a knife comes out clean when inserted into the thickest part.
- Allow to cool and serve.
