Ingredients

  • 8 fresh apricots
  • 150 ml white wine
  • 1 tbsp demerara sugar
  • 3 slices of chopped fresh ginger
  • low-fat natural yogurt

Cooking Instructions

  1. Cut the apricots in half and remove the centre stones and place the fruit in a small saucepan.
  2. Add the wine, sugar and ginger.
  3. Bring to a gentle simmer and cook until the fruit is soft.
  4. Serve warm with low-fat natural yogurt.
