Fig Tart

This fantastic fig tart is one of the easiest desserts to make and evokes tastes of Tuscany and the Mediterranean. It's a great recipe to use ripe figs, and the flaky filo pastry and low fat custard keeps the calories low. Sweet, crisp and delicious. 232 calories and 2.3% fat

Ingredients

  • 70g low-fat custard powder
  • 250ml boiling water
  • 5 sheets of filo pastry
  • 4 figs, quartered
  • golden syrup, to decorate
  • icing sugar, for dusting

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6. Make the custard by adding 250ml boiling water and allow to cool.
  2. Stack 5 sheets of filo on top of each other spraying lightly in between each layer with oil spray. Cut into 4 rectangles and place on a non-stick baking tray.
  3. Place a line of custard down the centre of each rectangle, then decorate with 4 fresh fig quarters. Bake in a hot oven for 10 minutes until golden brown. Drizzle with golden syrup, dust with icing sugar and serve.
