These cute Easter cup cakes are made from a lovely low-fat fairy cake recipe. Using low fat spread (just 18% fat) instead of butter (80% fat) halves the fat and keeps the calories low. Ingredients

  • 75g low-fat spread
  • 100g caster sugar
  • 3 eggs, beaten
  • 100g plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Cooking Instructions

  1. Beat the low-fat spread with the caster sugar, gradually adding the egg. Sieve the flour and baking powder and beat again adding the vanilla.
  2. Pour into 12 cake papers and bake in a preheated oven for 20 minutes until firm to touch.
  3. When the cakes are cooked, allow to cool, then decorate with roll out icing and dust with icing sugar.
