Ingredients
- 1 packet instant low-fat custard
- 450ml semi-skimmed milk
- 1 tsp vanilla extract
- 300ml 3% Greek yogurt
- 200g low-fat Christmas pudding
Cooking Instructions
- Make the custard as per the instructions using semi-skimmed milk instead of water and allow to cool. When cold whisk in the yogurt.
- Heat the Christmas pudding for a minute in a microwave oven to soften then crumble and fold into the mixture. Pour into a freezer container and freeze for 1 hour. Remove from the freezer and mix well, then return to the freezer.
- Keep mixing every hour to avoid ice crystals forming. Once the mixture starts to solidify cover and store until needed. When required, remove from the freezer for 5 minutes to soften, then serve.
Tips
This is a great way to use up left over Christmas pudding. Make it extra indulgent by adding a few chopped cherries or a tablespoon of liqueur.
