Christmas pudding frozen yogurt

Ingredients

  • 1 packet instant low-fat custard
  • 450ml semi-skimmed milk
  • 1 tsp vanilla extract
  • 300ml 3% Greek yogurt
  • 200g low-fat Christmas pudding

Cooking Instructions

  1. Make the custard as per the instructions using semi-skimmed milk instead of water and allow to cool. When cold whisk in the yogurt.
  2. Heat the Christmas pudding for a minute in a microwave oven to soften then crumble and fold into the mixture. Pour into a freezer container and freeze for 1 hour. Remove from the freezer and mix well, then return to the freezer.
  3. Keep mixing every hour to avoid ice crystals forming. Once the mixture starts to solidify cover and store until needed. When required, remove from the freezer for 5 minutes to soften, then serve.

Tips

This is a great way to use up left over Christmas pudding. Make it extra indulgent by adding a few chopped cherries or a tablespoon of liqueur.

Where can I get 3% fat Greek yog from?! I know about 0% and full fat but I can not find 3%. Can anyone help? I really, really want to do this for Christmas day.
