Ingredients
- 50g caster sugar
- 2 eggs, beaten
- 50g Flora Lighter than Light
- 75g plain flour
- 25g rice flour
- 2 tsps baking powder
- 2 tsps ground ginger
- 2 tsps finely chopped lemon grass
- juice of a lime
- maple syrup to drizzle
- low-fat Greek yogurt to serve
Cooking Instructions
- 1 Line a 20cm bamboo steamer with parchment paper, using a little low fat spread to make it stick to the sides. Cut a circle for the base ensuring there are no gaps for the mixture to seep through.
- 2 Combine the sponge ingredients together by creaming the low fat spread with the sugar and egg until smooth. Sieve in the flours and baking powder and mix in the ginger and lemon grass. Pour the mixture into the prepared steamer and cover with a lid.
- Steam over boiling water for 15 minutes or until dry to the touch.
- 3 Pour over the lime juice and drizzle with maple syrup. Serve warm with low-fat Greek yogurt.
