Ingredients

  • 1 whole fresh pineapple
  • 2 tbsps soft brown sugar
  • 1 tsp mixed spice
  • juice of 1 lemon

Cooking Instructions

  1. Prepare the pineapple buy slicing off the bottom. Stand it upright and cut down the pineapple, following the shape of the fruit, to remove the thick skin and eyes from the flesh, then cut into wedges.
  2. Heat a non-stick pan. Add the pineapple and cook for 5-6 minutes, sprinkling with the sugar, spice and lemon juice. Serve hot drizzled with the sugar syrup.

Does Dean want an assistant - well, food taster LOL! Looks gorgeous - going to make that for dessert tonight as I happen to have a fresh pineapple! :) I expect one could use tinned pineapple squares? Same idea, but smaller pieces!
