Ingredients
- For the pastry:
- 200g plain flour
- 100g low-fat spread
- For the filling:
- 2 tbsps reduced sugar red jam
- 100g low-fat spread
- 100g caster sugar
- 3 eggs, beaten
- 100g plain flour
- 1 tsp baking powder
- 2 tsps almond essence
- icing sugar, to serve
Cooking Instructions
- Preheat the oven to 150C, 300F, Gas Mark 2. Make the pastry by rubbing the low-fat spread into the flour to form a crumb, then press the pastry together. There should be no need for water. Wrap in cling film and allow to rest for 10 minutes.
- Roll out the pastry on a floured surface and line a 27cm tart tin. Spread the jam over the pastry base. Beat the low-fat spread with the caster sugar, gradually adding the egg.
- Sieve the flour and baking powder and beat again adding the almond essence. Pour the mixture over the jam and level with a knife. Bake in a preheated oven for 60 minutes.
- When the tart is cooked dust with icing sugar. Serve warm.
Tips
Mix the pastry as little as possible to prevent it from being chewy.
