Ingredients

  • For the pastry:
  • 200g plain flour
  • 100g low-fat spread
  • For the filling:
  • 2 tbsps reduced sugar red jam
  • 100g low-fat spread
  • 100g caster sugar
  • 3 eggs, beaten
  • 100g plain flour
  • 1 tsp baking powder
  • 2 tsps almond essence
  • icing sugar, to serve

Cooking Instructions

  1. Preheat the oven to 150C, 300F, Gas Mark 2. Make the pastry by rubbing the low-fat spread into the flour to form a crumb, then press the pastry together. There should be no need for water. Wrap in cling film and allow to rest for 10 minutes.
  2. Roll out the pastry on a floured surface and line a 27cm tart tin. Spread the jam over the pastry base. Beat the low-fat spread with the caster sugar, gradually adding the egg.
  3. Sieve the flour and baking powder and beat again adding the almond essence. Pour the mixture over the jam and level with a knife. Bake in a preheated oven for 60 minutes.
  4. When the tart is cooked dust with icing sugar. Serve warm.

Tips

Mix the pastry as little as possible to prevent it from being chewy.
