Ingredients
- 200g stick french bread
- zest of 1 orange
- 2 tsps caster sugar
- 600ml semi-skimmed milk
- 3 eggs
- 2 tbsps caster sugar
- 2 tsps vanilla extract
- 2 tbsps apricot jam
Cooking Instructions
- Preheat the oven to 180C, 350F, Gas Mark 4.
- Cut the bread into thin slices and place on a non-stick baking tray. Scatter with the orange zest and caster sugar. Bake in the oven for 10 minutes until lightly toasted.
- Heat the milk in a saucepan until almost boiling. In a bowl whisk together the eggs, caster sugar and vanilla extract then, still whisking pour the hot milk over, then pass the mixture through a sieve into a jug.
- Line an ovenproof dish with the toasted bread slices, then gradually pour the hot mixture over the bread, allowing the bread to soak up the liquid before adding more.
- Leave to stand for 10 minutes before baking in the oven for 25-30 minutes until well risen and golden brown.
- Heat the apricot jam and brush on the hot pudding. Serve hot or cold with low-fat custard or virtually fat free fromage frais.
