Ingredients
- 4 cooking apples
- 100g ready to eat prunes
- 2 tbsps sweet sherry
- 2 tbsps brown sugar
- 1 tsp mixed spice
- 6 sheets filo pastry
- icing sugar, to dust
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6. Peel and core the apples and place in a saucepan with the prunes and sherry. Cook for 4-5 minutes until they start to soften.
- Remove the mixture from the heat and stir in the sugar and spice. Stack the sheets of filo onto a sheet of baking paper or baking liner spraying in between each filo sheet with oil spray.
- Spread the mixture on top of the pastry and gently roll up the pastry to make a long log. Lift the baking paper or liner with the log onto a baking tray, lightly spray with oil spray and cook in a preheated oven for 15 minutes until brown.
- Dust with icing sugar and serve.
Tips
Serve this sweet treat hot with low-fat custard or iced dessert.
