Ingredients
- 2 sheets filo pastry
- 1 litre chicken stock
- 6 spring onions, finely chopped
- 12 thin strips of leek
- For the filling
- 100g minced pork
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sherry
- pinch of sugar
Cooking Instructions
- Cut the filo into 12 squares and cover with a damp cloth.
- Combine all the filling ingredients together in a bowl and mix well. Moisten all the edges of the filo squares with water. Place a heaped teaspoon of wonton filling in the centre. Twist the pastry to resemble a money bag.
- Bring a large pot of water to a boil. Blanch the leek strips until softened and remove. Wrap a strip of leek around each wonton. Add the wontons to the pot, making sure there is enough room for them to move about.
- Let them boil for 5-8 minutes, until they rise to the top and the filling is cokked through. Remove with a slotted spoon.
- To make the soup, bring the chicken stock to a boil. Add the wontons and bring the soup back to a boil. Add the spring onion and stir well. Ladle into soup bowls, allowing 3 wontons per person.
