Watermelon Waldorf salad

Ingredients

  • 1 red eating apple
  • juice of 1 lemon
  • ½ watermelon, seeds removed
  • 100g prepared mixed melon
  • 4 spring onions, sliced
  • 8 celery sticks, chopped
  • 100g green seedless grapes, cut in half
  • 2 tbsps 0% fat Greek yogurt
  • 1 tbsp low-fat mayonnaise
  • 1 tbsp (14g) dried cranberries
  • salt and freshly ground black pepper

Cooking Instructions

  1. Quarter the apple and cut out the core. Chop into small pieces and place in a mixing bowl. Add the lemon juice and toss well to coat.
  2. Chop the watermelon flesh into the apple bowl. Add the spring onions, celery and grapes and mix well.
  3. Whisk together the yogurt and mayonnaise and add to the salad. Season with salt and black pepper, mix well and spoon into a serving dish. Sprinkle with the dried cranberries and serve.

Tips

You can vary the choice of melons to add colour to this refreshing salad.
