Watermelon Waldorf salad

Ingredients
- 1 red eating apple
- juice of 1 lemon
- ½ watermelon, seeds removed
- 100g prepared mixed melon
- 4 spring onions, sliced
- 8 celery sticks, chopped
- 100g green seedless grapes, cut in half
- 2 tbsps 0% fat Greek yogurt
- 1 tbsp low-fat mayonnaise
- 1 tbsp (14g) dried cranberries
- salt and freshly ground black pepper
Cooking Instructions
- Quarter the apple and cut out the core. Chop into small pieces and place in a mixing bowl. Add the lemon juice and toss well to coat.
- Chop the watermelon flesh into the apple bowl. Add the spring onions, celery and grapes and mix well.
- Whisk together the yogurt and mayonnaise and add to the salad. Season with salt and black pepper, mix well and spoon into a serving dish. Sprinkle with the dried cranberries and serve.
Tips
You can vary the choice of melons to add colour to this refreshing salad.
