Turkey and Mango Samosas

Ingredients
- 2 baby leeks, finely chopped
- 1 garlic clove, crushed
- 200g turkey mince
- 1-2 tsps vegetable stock powder
- 1 tbsp chopped fresh mint
- 1 tbsp mango chutney
- 4 sheets filo pastry
- olive oil spray
- salt and freshly ground black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Preheat a non-stick frying pan, then dry-fry the leeks and garlic for 2-3 minutes until soft. Add the turkey and continue cooking for 5 minutes. Stir in the stock powder, mint and chutney and mix well. Remove from the heat and allow to cool.
- Place the filo sheets on a chopping board. Cut each sheet into 3 lengthways, then lightly spray with olive oil spray.
- Place a dessertspoon of turkey mixture at each end of the strips, fold the pastry over diagonally to enclose the meat in a triangle, then transfer to a baking tray and spray again with oil.
- Bake in the oven for 15-20 minutes until golden brown. Serve with fresh vegetables or salad.
