Ingredients

  • 2 slices of Granary bread
  • 100g drained tuna (in brine)
  • 1 tbsp extra light mayonnaise
  • 1 red pepper, deseeded and diced
  • a few chopped fresh mixed herbs

Cooking Instructions

  1. Lightly toast 2 slices of granary bread on both sides.
  2. Mix 100g drained tuna (in brine) with 1 tbsp extra light mayo, 1 diced red pepper and a few chopped fresh mixed herbs.
  3. Spread on the toast and return to the grill until hot and bubbling.
  4. Serve with salad leaves as a light lunch.
