Ingredients
- 2 leeks, washed and finely diced
- 1 clove garlic, crushed
- 2 carrots, peeled and diced
- 1 red pepper, deseeded and diced
- 2 sticks celery, diced
- 3 tsps vegetable bouillion stock powder
- 600ml water
- 1 small can tuna in spring water
- 1 tbsp freshly chopped chives
Cooking Instructions
- 1 Dry-fry the leeks in a medium saucepan until soft. Add the garlic and remaining ingredients, except the chives, bringing to a gentle simmer.
- 2 Simmer for 20 minutes until the vegetables are soft. Add the chives and serve with wholemeal bread.
