Ingredients

  • 2 leeks, washed and finely diced
  • 1 clove garlic, crushed
  • 2 carrots, peeled and diced
  • 1 red pepper, deseeded and diced
  • 2 sticks celery, diced
  • 3 tsps vegetable bouillion stock powder
  • 600ml water
  • 1 small can tuna in spring water
  • 1 tbsp freshly chopped chives

Cooking Instructions

  1. 1 Dry-fry the leeks in a medium saucepan until soft. Add the garlic and remaining ingredients, except the chives, bringing to a gentle simmer.
  2. 2 Simmer for 20 minutes until the vegetables are soft. Add the chives and serve with wholemeal bread.

Vary the vegetables to suit your taste.
