Ingredients

  • 1 red pepper, deseeded and finely chopped
  • 2 leeks, finely chopped
  • 2 garlic cloves, crushed
  • 300ml vegetable stock
  • 10g dried mushrooms
  • 300ml semi-skimmed milk
  • 300g cooked turkey, cut into small pieces
  • 1 tsp finely chopped lemongrass
  • 1 tsp red thai curry paste
  • ½ small chilli, chopped
  • 1 tbsp freshly chopped basil
  • 1 tbsp cornflour
  • 2 tbsps low-fat yogurt
  • chives, to serve

Cooking Instructions

  1. Preheat a large non-stick pan. Dry-fry the pepper, leek and garlic for 2-3 minutes.
  2. Add the stock and mushrooms and boil until the mushrooms are soft. Add the milk, turkey, spices and basil and simmer gently for 20 minutes.
  3. Mix the cornflour with a little cold water and stir on the soup to allow the soup to thicken. Just before serving, remove from the heat and stir in the yogurt.
  4. Garnish with some chopped chives.

Tips

Dried mushrooms add a strong flavour to this creamy soup.
