Ingredients
- 200g cooked sweet potatoes
- 1 tbsp fromage frais
- 1 garlic clove, crushed
- 3 egg yolks
- 1 tbsp chopped fresh basil
- 50g Rosemary Conley low-fat Mature cheese
- salt and black pepper
Cooking Instructions
- Place 200g cooked sweet potatoes in a large mixing bowl and mash well until smooth. Beat in 1tbsp fromage frais, 1 crushed garlic clove, 3 egg yolks (reserve the whites) and 1 tbsp chopped fresh basil and season with salt and black pepper.
- In a clean bowl, whisk the reserved egg whites until stiff. Using a metal spoon, gently fold them into the potato mixture, taking care not to collapse the egg whites.
- Pour the mixture into 4 lightly greased ramekins and top with 50g grated Rosemary Conley low-fat Mature Cheese. Bake in a preheated oven at 180C, 350F, Gas Mark 4 for 20 minutes until well risen and golden brown.
- Serve immediately (before the souffle collapses) with a selection of fresh vegetables or salad.
