Ingredients
- 4 field mushrooms
- 200g fresh spinach
- 30g Rosemary Conley low-fat Mature Cheese, grated
- dash of soy sauce
Cooking Instructions
- Wipe 4 field mushrooms with a damp piece of kitchen paper, then place in a roasting tray face-down and cook in a pre-heated oven at 200C, 400F, Gas Mark 6 for 10 minutes.
- Wash 200g fresh spinach well and place in a large saucepan containing a dessertspoon of water.
- Stand over a low heat to allow to wilt, then drain the spinach well.
- Remove the mushrooms from the oven, turn them over, then arrange the spinach on top and drizzle with soy sauce.
- Top with 30g grated Rosemary Conley Low-fat Mature Cheese and return to the oven for 5 minutes to brown.
- Serve hot as a side dish or double the portions and serve as a light lunch with vegetables or salad and sweet chilli sauce.
