Spicy vegetable couscous salad

Ingredients
- 100g couscous
- 1 tsp vegetable stock powder
- 250ml boiling water, from a ketlle
- 2 spring onions, chopped
- 1 red pepper, deseeded and diced
- 1 small red chilli, chopped
- 2 tomatoes, diced
- ½ cucumber, finely diced
- lemon juice to taste
- freshly ground black pepper
- fresh basil leaves to garnish
Cooking Instructions
- Put the couscous in a mixing bowl and add the stock powder and boiling water. Mix well, then cover with clingfilm and leave for 1 minute until the water has been absorbed.
- Heat a non-stick pan, add the spring onions, red pepper and chilli and dry-fry until lightly coloured, seasoning with black pepper.
- Remove the pan from the heat and spoon into a mixing bowl. Add the couscous, tomatoes and cucumber and mix well. Season with salt and black pepper and a little lemon juice.
- Pile into a serving dish and serve either warm or cold garnished with fresh basil leaves.
