Smoky prawns with garlic mayo

Ingredients
- 2 garlic cloves, crushed
- pinch of saffron
- 1 tsp smoked paprika
- 12 large fresh uncooked prawns, with shells on
- juice of 1 lemon
- 3 tbsps extra light mayonnaise
- rocket leaves to serve
Cooking Instructions
- Place the garlic and saffron in a small bowl and add 2 tsps of boiling water. Leave to steep for 2-3 minutes before mixing in the mayonnaise.
- Heat a griddle pan and lightly spray with oil spray. Lightly dust the pan with the paprika and add the prawns, Cook the prawns for 1 minute on each side, then add the lemon juice to deglaze the pan.
- When the prawns are bright pink and firm, remove from the pan and serve on a bed of rocket leaves. Serve the garlic mayo dipping sauce seperately.
Tips
Make the mayo in advance to release the saffron colours.
