Smokey Prawns with Garlic Mayo

You can use any size prawns here for this lovely low fat starter. Frying in smoked paprika gives the prawns a lovely flavour and adding saffron to the garlic mayo gives the dish a luxurious colour and exotic flavour. Indulge guilt free at only 35 calories (yes 35 calories!!!!) per serving and 1.8% fat.

Smoky prawns with garlic mayo

Ingredients

  • 2 garlic cloves, crushed
  • pinch of saffron
  • 1 tsp smoked paprika
  • 12 large fresh uncooked prawns, with shells on
  • juice of 1 lemon
  • 3 tbsps extra light mayonnaise
  • rocket leaves to serve

Cooking Instructions

  1. Place the garlic and saffron in a small bowl and add 2 tsps of boiling water. Leave to steep for 2-3 minutes before mixing in the mayonnaise.
  2. Heat a griddle pan and lightly spray with oil spray. Lightly dust the pan with the paprika and add the prawns, Cook the prawns for 1 minute on each side, then add the lemon juice to deglaze the pan.
  3. When the prawns are bright pink and firm, remove from the pan and serve on a bed of rocket leaves. Serve the garlic mayo dipping sauce seperately.

Tips

Make the mayo in advance to release the saffron colours.
