Ingredients
- 300g fresh celeriac
- 300g fresh swede
- 1 vegetable stock cube
- oil spray
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6. Cut the vegetables into quarters and remove the peel. Cut again into small wedges and place in a large saucepan with enough boiling water to cover and the vegetable stock cube.
- Cook for 5 minutes, then strain and pour onto a non-stick baking tray. Lightly spray with oil spray and bake in a preheated oven for 30 minutes until lightly browned.
Tips
Keep the vegetables in big pieces to prevent them from shrinking too small once roasted.
