Roasted Celeriac and Swede

A great alternative to the usual roast potatoes, this low-fat roast celeriac and swede recipe is fully of flavour and guilt free! As the celeriac roasts it absorbs some of the flavour of the swede and caramelises to a golden honey brown.

Roasted celeriac and swede

Ingredients

  • 300g fresh celeriac
  • 300g fresh swede
  • 1 vegetable stock cube
  • oil spray

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6. Cut the vegetables into quarters and remove the peel. Cut again into small wedges and place in a large saucepan with enough boiling water to cover and the vegetable stock cube.
  2. Cook for 5 minutes, then strain and pour onto a non-stick baking tray. Lightly spray with oil spray and bake in a preheated oven for 30 minutes until lightly browned.

Tips

Keep the vegetables in big pieces to prevent them from shrinking too small once roasted.
