Queen Scallops with Ginger and Spring Onion

At only 27 calories each these succulent queen scallops make a perfect light starter and look pretty served in their shells. Scallops don't really need much doing to them – apart from cooking very briefly. In this recipe they're served on a salad of ginger and spring onion and steamed in lime juice. Queen scallops with ginger and spring onion

Ingredients

  • 4 Queen scallops
  • 3 spring onions, finely chopped
  • 2 tsps pickled ginger
  • juice of a lime
  • salt and black pepper

Cooking Instructions

  1. Loosen the scallops and remove them from the shell and lightly rinse with clean water.
  2. Place a bed of onion and ginger in the base of the shells. Preheat a non-stick griddle pan and season with salt and black pepper. Cook the scallops for 1-2 minutes each side then sit back on the shell. Just before serving squeeze with fresh lime.

Tips

Cook very briefly for 1-2 minutes each side to prevent them becoming tough.
