Queen scallops with ginger and spring onion

Ingredients
- 4 Queen scallops
- 3 spring onions, finely chopped
- 2 tsps pickled ginger
- juice of a lime
- salt and black pepper
Cooking Instructions
- Loosen the scallops and remove them from the shell and lightly rinse with clean water.
- Place a bed of onion and ginger in the base of the shells. Preheat a non-stick griddle pan and season with salt and black pepper. Cook the scallops for 1-2 minutes each side then sit back on the shell. Just before serving squeeze with fresh lime.
Tips
Cook very briefly for 1-2 minutes each side to prevent them becoming tough.
