Ingredients
- 300g red cabbage, chopped
- 1 red onion, sliced
- 1 tbsp brown sugar
- 1 tbsp red wine vinegar
- 2 pomegranates, seeded and juiced
- pinch of salt
- 300ml boiling water
Cooking Instructions
- Place the cabbage and onion in a casserole dish.
- Add the brown sugar, red wine vinegar and the juice and seeds from 2 pomegranates.
- Sprinkle with salt and pour in the boiling water. Cover with a lid and bake in a preheated oven at 200C, 400F, Gas Mark 6 for 40 minutes or until cooked through.
- Serve hot or cold with vegetables or salad.
