Pineapple coleslaw

Ingredients

  • 200g white cabbage
  • 200g carrots, peeled
  • 1 small white onion
  • 2 celery sticks
  • 100g prepared pineapple
  • 2 tbsps low-fat mayonnaise
  • 1 tbsp low-fat natural yogurt
  • juice of 1 lime
  • salt and freshly ground black pepper

Cooking Instructions

  1. Finely shred the cabbage, and grate the carrots, celery and onion into a mixing bowl.
  2. Stir in the remaining ingredients and mix well, seasoning with salt and black pepper.
  3. Pile into a serving dish and chill until ready to serve.

Tips

This homemade coleslaw will keep for up to 5 days in the refrigerator.
