Ingredients
- 1 x 400g can chopped tomatoes
- 250g tomato passata
- 1-2 tsps vegetable stock
- 1 red onion, finely chopped
- 1 leek, sliced
- 2 courgettes, diced
- 4 carrots, chopped
- 50g small pasta shapes
- 300ml boiling water, from a kettle
- 100g baby corn, chopped
- 50g mange tout, chopped
- 1 tbsp chopped fresh basil
Cooking Instructions
- Put the canned tomatoes, passata and stock powder in a large suacepan. Add the onion, leek, courgettes, carrots and pasta, then pour in the boiling water and simmer gently for 15 minutes.
- Add the corn and mange tout and continue cooking for 5 minutes, then stir in the basil.
Tips
You can add a little chopped fresh chilli to pep up the flavour.
