Prawn cocktail

Ingredients

  • 150g cooked prawns
  • ½ iceberg lettuce
  • orange zest
  • For the sauce
  • 2 tbsps Hellmanns extra light mayonnaise ( per 15ml 14kcals 0.6g fat)
  • 1 tbsp 3% fat Greek yogurt
  • 1 tbsp tomato ketchup
  • dash of Tabasco chilli sauce
  • lemon juice, to taste
  • orange and lemon wedges, to garnish

Cooking Instructions

  1. Rinse the prawns under cold water and drain in a sieve. Shred the lettuce, place in the base of 4 glasses and top with the prawns. Lightly grate over some orange zest.
  2. Mix the sauce ingredients together and place on top. Decorate with orange slices and lemon wedges and chill until ready to serve.

Tips

Add a little grated orange zest to the prawns and mix through for a citrus flavour
