Griddled Squid with Chilli and Lime

If you've only ever had squid deep fried then you probably think it's a no no on a diet but cooking it this way on the griddle keeps all the flavour and adds no extra fat. The chilli, lime and onion give it a lovely flavour without being too overpowering making a delicious starter. 118 calories and only 1% fat.

Griddled squid with chilli and lime

Ingredients

  • 450g prepared squid
  • 1 red onion, finely sliced
  • 2 large tomatoes, chopped
  • 1 small red chilli, sliced
  • zest and juice of 1 lime
  • salt and freshly ground black pepper

Cooking Instructions

  1. Open out the squid and cut into pieces. Season lightly with salt and black pepper.
  2. Heat a griddle pan and lightly spray with oil spray. Add the squid and press down, using a spatula. Cook for 1 minute on each side, them remove from pan and keep warm.
  3. Add the onion to the pan and cook briskly until soft. Add the remaining ingredients and toss well.
  4. Return the squid to the pan and toss together before transferring to serving plates. Serve with a green salad.

Tips

Make sure you only cook the squid very lightly or it will become tough and rubbery.

Absolutely fantastic starter with bags of flavour!! I presented mine in a cup of iceberg lettuce.
