Griddled squid with chilli and lime

Ingredients
- 450g prepared squid
- 1 red onion, finely sliced
- 2 large tomatoes, chopped
- 1 small red chilli, sliced
- zest and juice of 1 lime
- salt and freshly ground black pepper
Cooking Instructions
- Open out the squid and cut into pieces. Season lightly with salt and black pepper.
- Heat a griddle pan and lightly spray with oil spray. Add the squid and press down, using a spatula. Cook for 1 minute on each side, them remove from pan and keep warm.
- Add the onion to the pan and cook briskly until soft. Add the remaining ingredients and toss well.
- Return the squid to the pan and toss together before transferring to serving plates. Serve with a green salad.
Tips
Make sure you only cook the squid very lightly or it will become tough and rubbery.
