Beans and fennel with red onion marmalade

Ingredients
- 1 red onion, sliced
- 1 tbsp balsamic vinegar
- 1 tbsp runny honey
- 400g fine green beans
- 2 heads fennel
Cooking Instructions
- Preheat a non-stick frying pan. Add the onion and dry fry for 3-4 minutes until soft. Add the balsamic and honey continuing to cook until the mixture becomes the consistency of marmalade. Remove from heat.
- Top and tail the beans, thinly slice the fennel and cook in a pan of boiling salted water until tender. Drain well and place on a serving dish. Top with the onion marmalade and season with freshly milled black pepper.
Tips
Cooking the fennel with the beans gives it a whole new flavour.
