Green Beans and Fennel with Red Onion Marmalade

Beans and fennel with red onion marmalade

Ingredients

  • 1 red onion, sliced
  • 1 tbsp balsamic vinegar
  • 1 tbsp runny honey
  • 400g fine green beans
  • 2 heads fennel

Cooking Instructions

  1. Preheat a non-stick frying pan. Add the onion and dry fry for 3-4 minutes until soft. Add the balsamic and honey continuing to cook until the mixture becomes the consistency of marmalade. Remove from heat.
  2. Top and tail the beans, thinly slice the fennel and cook in a pan of boiling salted water until tender. Drain well and place on a serving dish. Top with the onion marmalade and season with freshly milled black pepper.

Tips

Cooking the fennel with the beans gives it a whole new flavour.
