Green bean, blueberry & mango salad

Ingredients

  • 1 x 200g pack fine green beans
  • 1 x 175g can cannellini beans
  • 1 red onion, finely chopped
  • 100g blueberries
  • 1 mango, peeled and diced
  • 4 tomatoes, skinned and diced
  • salt and freshly ground black pepper
  • For the dressing
  • 2 tbsps cloudy apple juice
  • 1 tbsp white wine vinegar
  • 1 tsp coarse grain mustard

Cooking Instructions

  1. Cook the fine beans until tender, then drain and refresh under cold running water. Drain and rinse the canned beans and place both beans in a bowl. Add the onion, blueberries, mango and tomato and season with salt and black pepper.
  2. Whisk the dressing ingredients together and pour over the beans, Toss well and transfer to a serving dish.

Tips

Once made up, this salad will kepp for 3-4 days in the refrigerator.
