Green bean, blueberry & mango salad

Ingredients
- 1 x 200g pack fine green beans
- 1 x 175g can cannellini beans
- 1 red onion, finely chopped
- 100g blueberries
- 1 mango, peeled and diced
- 4 tomatoes, skinned and diced
- salt and freshly ground black pepper
- For the dressing
- 2 tbsps cloudy apple juice
- 1 tbsp white wine vinegar
- 1 tsp coarse grain mustard
Cooking Instructions
- Cook the fine beans until tender, then drain and refresh under cold running water. Drain and rinse the canned beans and place both beans in a bowl. Add the onion, blueberries, mango and tomato and season with salt and black pepper.
- Whisk the dressing ingredients together and pour over the beans, Toss well and transfer to a serving dish.
Tips
Once made up, this salad will kepp for 3-4 days in the refrigerator.
