Gratin of lobster tails

Ingredients
- 200g cooked lobster tails or large prawns
- 1 tbsp chopped chives
- 300ml semi-skimmed milk
- 1 tbsp cornflour
- ½ tsp vegetable stock powder
- 1 tsp Dijon mustard
- 1 tsp freshly chopped dill
- 2 tbsps Rosemary Conley low-fat Mature Cheese, grated
- black pepper
- Paprika, for dusting
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Divide the lobster into 4 and place in the bottom of 4 individual ovenproof dishes and sprinkle with the chives, seasoning with freshly milled black pepper.
- Heat the milk and stock cube in a saucepan. Mix the cornflour with a little extra cold milk and whisk into the hot milk. Stir continuously as the sauce thickens then reduce the heat and simmer for 2-3 minutes. Stir in the mustard, chopped dill and cheese.
- Pour the sauce over the lobster and serve with a dust of paprika.
Tips
If lobster is unavailable use large prawns instead as they tend to be more meaty than the small ones.
