Garlic chicken livers

Ingredients

  • 2 red onions, finely diced
  • 2 garlic cloves, crushed
  • 2 x 225g packs chicken livers
  • pinch dried chilli flakes
  • 1 tsp vegetable stock powder
  • 1 tbsp Madeira wine
  • 1 tsp low-fat pesto
  • 200g spinach, shredded
  • salt and freshly ground black pepper

Cooking Instructions

  1. Heat a large, heavy-bottomed, non-stick frying pan, and then dry-fry the onions and garlic for 3–4 minutes until soft.
  2. Add the chicken livers and cook for 1 minute to seal before stirring in the chilli flakes, stock powder, Madeira wine and low-fat pesto.
  3. Stir in the spinach and allow it to wilt
  4. Then serve the chicken livers hot on a bed of mashed potatoes or on baked jacket potatoes.

Tips

Buy frozen chicken livers and defrost them in the fridge overnight.
