Ingredients
- 2 red onions, finely diced
- 2 garlic cloves, crushed
- 2 x 225g packs chicken livers
- pinch dried chilli flakes
- 1 tsp vegetable stock powder
- 1 tbsp Madeira wine
- 1 tsp low-fat pesto
- 200g spinach, shredded
- salt and freshly ground black pepper
Cooking Instructions
- Heat a large, heavy-bottomed, non-stick frying pan, and then dry-fry the onions and garlic for 3–4 minutes until soft.
- Add the chicken livers and cook for 1 minute to seal before stirring in the chilli flakes, stock powder, Madeira wine and low-fat pesto.
- Stir in the spinach and allow it to wilt
- Then serve the chicken livers hot on a bed of mashed potatoes or on baked jacket potatoes.
Tips
Buy frozen chicken livers and defrost them in the fridge overnight.
