Ingredients
- 2 white onions, finely chopped
- 2 garlic cloves, crushed
- 350g chestnut mushrooms
- pinch of saffron
- 1 tbsp light soy sauce
- 1 tbsp plain flour
- 600ml vegetable stock
- 300ml semi-skimmed milk
- 1 tbsp chopped fresh thyme
- 2 tbsps 2% fat Greek yogurt
- lime zest, to garnish
Cooking Instructions
- Heat a large non-stick saucepan and dry-fry the onions and garlic until soft. Add the sliced mushrooms, saffron, soy sauce and thyme and continue to cook lightly.
- Sprinkle the flour over the vegetables and cook out for 1 minute, stirring all the time, before gradually stirring in the stock and milk. Simmer gently for 20 minutes.
- Just before serving, remove the pan from the heat and stir in the yogurt. Adjust the seasoning, garnish with a little fresh lime zest and serve with a small (50g) granary baguette per person.
Tips
For a more intense mushroom flavour, use dried mushrooms - soak them overnight before using.
