Ingredients
- 1 x 150g skinless chicken breast, cut into small pieces
- 2 celery sticks, finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 300ml vegetable stock
- 1 tbsp plain flour
- 300ml semi-skimmed milk
- 1 tbsp chopped fresh chives, plus extra to garnish
- 2 tbsps 3% fat Greek yogurt
Cooking Instructions
- Heat a large non-stick saucepan. Add the chicken, celery, onion and garlic and dry-fry together for 2-3 minutes.
- Pour in a little of the vegetable stock, then sprinkle the flour over the vegetables and mix well. Cook out the flour for 1 minute before gradually mixing in the remaining stock and the milk. Simmer gently for 10-15 minutes to thicken.
- Stir in the chives and, just before serving, remove the pan from the heat and stir in the yogurt. Pour into warmed bowls and garnish with a few extra chives.
