Christmas trimmings

Ingredients

  • GLUTEN FREE SAGE AND ONION STUFFING
  • 1 onion, finely chopped
  • 6 sage leaves
  • 100g gluten free breadcrumbs
  • 2 tbsps chopped parsley
  • 1 tsp vegetable bouillon powder
  • LOW-FAT BACON ROLLS - Serves-12,cook time-20 mins,prep time-10mins,4.6% fat, 58 Kcals per serving.
  • 6 Bowyers 95% fat free sausages
  • 6 rashers of plain or smoked back bacon
  • BREAD SAUCE-Serves 8, cook time-20mins, prep time-10mins, 0.2g fat, 41 Kcal per serving.
  • 1/2 pint(300ml) skimmed milk
  • 1 small onion, chopped
  • 3 cloves
  • 1 bay leaf
  • 6-8 tablespoons fresh breadcrumbs
  • salt and freshly ground black pepper

Cooking Instructions

  1. GLUTEN FREE SAGE & ONION STUFFING
  2. Dry-fry the onion in a preheated non-stick pan until soft.
  3. Spoon into a mixing bowl and mix in the remaining stuffing ingredients, adding a little boiling water and leave to cool.
  4. Divide the mixture into 8 balls or transfer to a non-stick ovenproof dish.
  5. Preheat the oven to 190C, 375F, Gas Mark 5 and cook for 20 mins.
  6. LOW-FAT BACON ROLLS
  7. Preheat the oven to 200C, 400F and Gas Mark 6. Using a serrated knife cut each sausage in half lengthways.
  8. Using scissors trim away the rind and any fat from the edges of the bacon and cut each slice in half lengthways.
  9. BREAD SAUCE
  10. Pour the milk into a pan and slowly bring to the boil. Add the chopped onion, cloves and bay leaf. Remove from the heat, cover the pan and leave for 15-20 mins to allow flavours to infuse.
  11. Remove the cloves and bay leaf, add the breadcrumbs and black pepper and return to the heat, stir gently until boiling.
  12. Season with salt and black pepper.
  13. Remove from the heat and place in a small covered serving dish (a small bowl covered with foil would work just as well). Keep warm until ready to serve.

Tips

Low-fat bacon rolls - before wrapping the sausage with bacon add a fresh sage or basil leaf for a more herby flavour.
