Ingredients
- 200g cooked pasta shapes
- 4 spring onions, chopped
- ½ diced cucumber
- 1 red pepper, deseeded and diced
- 2 courgettes, grated
- 3 tbsp extra light mayonnaise
- 1 tbsp 3% fat Greek yogurt
- 1 tbsp tomato ketchup
- chopped pickled chillies
- sprinkling of chopped chives
Cooking Instructions
- Refresh 200g cooked pasta shapes in cold water and drain well.
- Place in a bowl with 4 chopped spring onions, ½ diced cucumber, 1 diced red pepper and 2 grated courgettes.
- Mix in 3 tbsps extra light mayo, 1 tbsp 3% fat Greek yogurt and 1 tbsp tomato ketchup.
- Pile into a serving dish and top with chopped pickled chillies and a sprinkling of chopped chives.
