Chicken and mushroom crispy pancakes

Ingredients

  • Basic pancake batter, to make 6 pancakes
  • 2 skinless chicken breasts, cut into strips
  • 4 spring onions, finely sliced
  • 6 chestnut mushrooms, sliced
  • 1 sage leaf, finely chopped
  • 1 small can condensed mushroon soup

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6.
  2. Dry-fry the chicken in a non-stick pan until lightly browned. Add the spring onion and mushrooms, sage and soup and simmer for 5 minutes.
  3. Spoon into the pancakes and place in an ovenproof dish. Bake in the oven for 10 minutes until the pancakes are crispy.
