Chicken noodle soup

Ingredients

  • 200g lean chicken breast (no skin), cut into strips
  • 3 baby leeks, finely chopped
  • 1 garlic clove, crushed
  • 2 tsps ground coriander
  • ½ tsp ground tumeric
  • 1 small fresh green chilli, chopped
  • seeds from 4 crushed cardamom pods
  • 600ml vegetable stock
  • 100g fine rice noodles
  • 2 tbsps chopped fresh basil
  • 50g shredded fresh watercress
  • freshly ground black pepper

Cooking Instructions

  1. Preheat a non-stick wok or frying pan, then dry-fry the chicken until lightly browned on all sides and season with black pepper. Place to one side.
  2. Place the leeks, garlic, spices, vegetable stock and rice noodles in a large saucepan and bring to a gentle simmer.
  3. When the noodles are cooked, add the chicken to the pan and stir in the basil and watercress. Serve straight away.
