Ingredients
- 1 large onion, diced
- 1 small cauliflower (about 600g), broken into florets
- 2 garlic cloves, crushed
- 1 tsp ground coriander
- 2 tsps vegetable stock powder
- 200g fresh leaf spinach
- 2% fat Greek yogurt, to garnish
- salt and freshly ground black pepper
Cooking Instructions
- Put the onion, cauliflower, garlic, coriander and vegetable stock powder in a large saucepan and cover with water. Bring to the boil and simmer gently until the cauliflower is soft and cooked.
- Allow the soup to cool slightly, then pour into a liquidiser and blend until smooth adding the fresh spinach in batches.
- Return the soup to the saucepan to reheat, adding more seasoning and adjusting the consistency by adding boiling water if required.
- Pour the soup into warmed serving bowls, add a swirl of yogurt to each bowl and serve with a small granary roll (max 150 kcal) per person.
Tips
Once made, this soup will keep for up to 4 days in the fridge.
