Cauliflower Bhaji

Ingredients

  • 2 red onions, chopped
  • 2 garlic cloves, crushed
  • 1 red pepper, deseeded and diced
  • 1 cauliflower (300g), broken into florets
  • 1 tbsp medium curry powder
  • 2-3 curry leaves
  • 1 green chilli, finely chopped
  • 1 x 400g can chopped tomatoes
  • 1-2 tsps vegetable stock powder
  • 1 tbsp tomato puree
  • salt and freshly ground black pepper

Cooking Instructions

  1. Preheat a large non-stick pan, then dry-fry the onions and garlic for 1-2 minutes until soft. Add the red pepper, cauliflower and curry powder and cook for a further 5 minutes.
  2. Stir in the remaining ingredients, add sufficient water to cook the cauliflower, and simmer gently for 20 minutes until the cauliflower is cooked, topping up with a little extra water if required.
  3. Garnish with fresh coriander and serve with 1 blue Portion pot (55g uncooked weight) or 1 red Portion pot (144g cooked weight) basmati rice per person.
