Ingredients
- 2 red onions, chopped
- 2 garlic cloves, crushed
- 1 red pepper, deseeded and diced
- 1 cauliflower (300g), broken into florets
- 1 tbsp medium curry powder
- 2-3 curry leaves
- 1 green chilli, finely chopped
- 1 x 400g can chopped tomatoes
- 1-2 tsps vegetable stock powder
- 1 tbsp tomato puree
- salt and freshly ground black pepper
Cooking Instructions
- Preheat a large non-stick pan, then dry-fry the onions and garlic for 1-2 minutes until soft. Add the red pepper, cauliflower and curry powder and cook for a further 5 minutes.
- Stir in the remaining ingredients, add sufficient water to cook the cauliflower, and simmer gently for 20 minutes until the cauliflower is cooked, topping up with a little extra water if required.
- Garnish with fresh coriander and serve with 1 blue Portion pot (55g uncooked weight) or 1 red Portion pot (144g cooked weight) basmati rice per person.
