Ingredients
- 200g cooked fresh beetroot
- 1 red onion
- salt and black pepper, to taste
- 300ml semi-skimmed milk
- 50g Rosemary Conley low-fat Mature Cheese, grated
- chopped parsley to serve
Cooking Instructions
- Slice 200g cooked, fresh beetroot and 1 red onion and place in layers in an ovenproof dish, sprinkling with salt and black pepper.
- Haet 300ml semi-skimmed milk, then pour over the vegetables and top with 50g grated Rosemary Conley low-fat Mature Cheese.
- Bake in a preheated oven (200C, 400F, Gas Mark 6) for 30 minutes until golden brown.
- Serve as a vegetable accompaniment or use as a base for grilled meat or fish.
