Ingredients
- 2 large sweet potatoes (approx 300g)
- 1 vegetable stock cube
- 2 tsps Fajita mix
- spray oil
Cooking Instructions
- Preheat a barbecue or oven to 200C, 400F, Gas Mark 6.
- Cut the potatoes into thick slices and place in a saucepan. Add the stock cube and just cover with water. Bring to the boil and cook for 5 minutes.
- Strain well and place on a non-stick baking tray. Spray lightly with oil and sprinkle with the spices on both sides, place in a preheated oven or on a barbecue until golden brown.
- Great served with grilled steak or gammon.
Tips
Blanch the potatoes in advance and reheat quickly on the barbecue just as the meat has finished cooking.
