Barbecued sweet potato slices

Ingredients

  • 2 large sweet potatoes (approx 300g)
  • 1 vegetable stock cube
  • 2 tsps Fajita mix
  • spray oil

Cooking Instructions

  1. Preheat a barbecue or oven to 200C, 400F, Gas Mark 6.
  2. Cut the potatoes into thick slices and place in a saucepan. Add the stock cube and just cover with water. Bring to the boil and cook for 5 minutes.
  3. Strain well and place on a non-stick baking tray. Spray lightly with oil and sprinkle with the spices on both sides, place in a preheated oven or on a barbecue until golden brown.
  4. Great served with grilled steak or gammon.

Tips

Blanch the potatoes in advance and reheat quickly on the barbecue just as the meat has finished cooking.
