Ingredients

  • 2 eggs
  • 1 tbsp semi-skimmed milk
  • 250g asparagus, blanched and cut into pieces
  • salt and freshly ground black pepper

Cooking Instructions

  1. Beat the eggs with the milk. Add the asparagus pieces.
  2. Heat a non-stick pan and add the egg and asparagus mixture. Season with salt and black pepper and cook over a low heat for 2-3 minutes.
