- 2 eggs
- 1 tbsp semi-skimmed milk
- 250g asparagus, blanched and cut into pieces
- salt and freshly ground black pepper
Cooking Instructions
- Beat the eggs with the milk. Add the asparagus pieces.
- Heat a non-stick pan and add the egg and asparagus mixture. Season with salt and black pepper and cook over a low heat for 2-3 minutes.
