Ingredients
- For the dough
- 225g Wright's mixed grain bread mix
- 50ml warm skimmed milk
- For the topping
- 300ml tomato salsa
- 1 red onion, sliced
- 200g mixed seafood
- 1 red chilli, sliced
- 1 red pepper, diced
- 60g half-fat mozzarella cheese
- 50g low-fat cheddar cheese, grated
- a few basil leaves
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Place the flour in a large mixing bowl and make a slight well in the centre. Pour the milk into the well and mix with the flour, using the blade of a round-ended knife and adding more milk if required.
- Turn out onto a floured surface and knead well to form a soft dough. Cover with a damp cloth for 10 minutes.
- After 10 minutes, knead the dough again, then roll it out into a large circle and place on a non-stick baking tray or pizza pan.
- Spoon the salsa onto the base, leaving a border around the edge. Scatter the red onion, seafood, chilli and red pepper over the top and cover with the mozzarella and grated cheddar.
- Bake near the top of the oven for 20 minutes.
- Just before serving scatter with basil leaves. Serve hot with salad tossed in oil-free dressing.
