Ingredients

  • 2 red onions, diced
  • 2 garlic cloves, crushed
  • 400g lean diced venison
  • 2 celery sticks, chopped
  • 10g sundried tomatoes (non-oil variety), chopped
  • 500ml beef stock
  • 20g 70% dark chocolate, chopped
  • 1 tbsp gravy granules
  • 250g small button mushrooms
  • 1 tbsp mixed herbs (parsley, thyme, chives)
  • salt and freshly ground black pepper

Cooking Instructions

  1. Heat a non-stick frying pan and dry-fry the onions and garlic until they start to brown.
  2. Add the venison and season with salt and black pepper. Continue cooking to seal the venison.
  3. Stir in the celery, sundried tomatoes and beef stock, bringing the mixture to the boil, then stir in the chocolate and the gravy granules.
  4. Add the mushrooms and herbs, cover and simmer gently for 1 hour until the meat is tender.
  5. When the meat is tender, adjust the consistency of the sauce by adding more gravy granules or water. Serve with fresh green vegetables.

cooked this one and yet again it was lovely, wife wasnt overly impressed but its convinced me to cook it again. Adding chocolate to a stew would normally go against the grain but it does work very well
