Ingredients
- Selection of vegetables (eg. carrots, parsnips, peas, cabbage, leeks, onions)
- 175g potatoes, cooked
- 100g mushrooms
- 3 tbsps packet stuffing mix
- 1 tsp mixed herbs
- cup of breadcrumbs – preferably wholemeal
- ½ pt (250ml) vegetable stock
- 50g Rosemary Conley low fat Mature Cheese, grated
Cooking Instructions
- Cook the vegetables, chop them, and place in layers in a large ovenproof dish. Sprinkle the mixed herbs and stuffing mix between layers.
- Slice the mushrooms and place over the other vegetables. Then slice the pre-cooked potato, carefully lay across the top of the dish and sprinkle with the breadcrumbs.
- Carefully pour over the vegetable stock to moisten the contents of the dish and sprinkle with cheese.
- Bake in a moderate oven (180C, 350F, Gas Mark 4) for 20 minutes until piping hot. Alternatively, reheat in a microwave on medium for 7 minutes and place under a hot grill for 5 minutes to crisp the top.
