Ingredients
- 160g sweet potatoes, peeled and chopped
- 400g lean minced turkey
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 tsp vegetable stock powder
- 1 small red chilli, chopped
- 3 carrots, peeled and chopped
- 75g frozen sweetcorn
- 1 tbsp chopped fresh herbs
- 1 tbsp chicken gravy granules
- 2 tsps tomato puree
- 2 tbsps skimmed milk
- salt and ground black pepper
Cooking Instructions
- Preheat the oven to 200C, 400F, Gas Mark 6.
- Boil the sweet potatoes until soft. Meanwhile, dry -fry the turkey mince and add the onion and garlic. Cook for 3-4 minutes, stirring in the stock powder and chilli. Add the carrots, sweetcorn and herbs, along with 300ml water and simmer.
- Stir in the gravy granules and tomato puree and simmer again for 20 minutes. Transfer to an ovenproof dish.
- Drain the potatoes and mash, adding the milk and seasoning with salt and pepper. Spread the potato over the meat and smooth over with a fork. Oven bake for 20 minutes. Serve with vegetables.
