Tropical Prawn Salad

Ingredients

  • For the sauce
  • 2 tablespoon extra light (3% fat) mayonnaise
  • 1 tablespoon tomato ketchup
  • 2cm piece fresh root ginger, peeled and finely grated
  • For the salad
  • Selection of rocket and lamb’s lettuce leaves
  • 200g large cooked shelled prawns
  • ¼ fresh pineapple, peeled and cut into squares
  • ½ papaya, peeled, deseeded and cut into chunks
  • ½ mango, peeled and sliced away from the stone, then sliced into fingers
  • 10 cherry tomatoes, halved
  • 2cm piece cucumber, peeled and chopped
  • ½ red onion, finely chopped
  • ¼ each red, green, yellow peppers, chopped
  • 2 celery sticks, chopped

Cooking Instructions

  1. Make up the sauce by mixing the mayonnaise with the tomato ketchup and root ginger.
  2. Place a few lettuce leaves in 2 serving dishes.
  3. Layer some of the prawns and the other ingredients on top and drizzle with some of the sauce.
  4. Add more leaves and a further layer of ingredients.
  5. Continue layering until they are used up.
  6. Drizzle the remaining sauce over the top.
