Ingredients
- For the sauce
- 2 tablespoon extra light (3% fat) mayonnaise
- 1 tablespoon tomato ketchup
- 2cm piece fresh root ginger, peeled and finely grated
- For the salad
- Selection of rocket and lamb’s lettuce leaves
- 200g large cooked shelled prawns
- ¼ fresh pineapple, peeled and cut into squares
- ½ papaya, peeled, deseeded and cut into chunks
- ½ mango, peeled and sliced away from the stone, then sliced into fingers
- 10 cherry tomatoes, halved
- 2cm piece cucumber, peeled and chopped
- ½ red onion, finely chopped
- ¼ each red, green, yellow peppers, chopped
- 2 celery sticks, chopped
Cooking Instructions
- Make up the sauce by mixing the mayonnaise with the tomato ketchup and root ginger.
- Place a few lettuce leaves in 2 serving dishes.
- Layer some of the prawns and the other ingredients on top and drizzle with some of the sauce.
- Add more leaves and a further layer of ingredients.
- Continue layering until they are used up.
- Drizzle the remaining sauce over the top.
