Tofu houmous kebabs

Ingredients
- 250g tofu
- 1 red pepper, deseeded and diced
- 8 cherry tomatoes
- 1 x 400g can chickpeas, drained
- 1 garlic clove, crushed
- 150ml vegetable stock
- juice of ½ lemon
- 1 tbsp chopped fresh coriander
- salt and freshly ground black pepper
- sweet chilli sauce, to serve
Cooking Instructions
- Preheat the grill or a barbecue.
- Drain the tofu on kitchen paper and cut into bite-sized pieces.
- Take 4 wooden or metal skewers and thread the tofu, red pepper and tomatoes alternately on to each skewer, then place on a non-stick baking tray.
- Place the chickpeas in a food processor with the garlic and blend until smooth, adding the lemon juice and vegetable stock gradually until a thin paste is formed (you can add more stock if required).
- Season the paste with salt and black pepper, stir in the chopped coriander and then drizzle the paste over the tofu, coating all sides.
- Cook the kebabs under the grill or on the barbecue for 8-10 minutes each side.
- Serve the kebabs with sweet chilli sauce plus 1 x 200g baked sweet potato per person and a mixed salad.
Tips
This paste makes a great dip or sandwich filler.
