Toad in the hole is a humourously named dish and traditional British cooking. Recipes usually call for dripping or fat but this low-fat version uses 5% sausages and a fabulous frying pan that needs no fat. Toad in the hole

Ingredients

  • 8 low-fat sausages
  • 100g plain flour
  • 2 eggs, beaten
  • 150ml semi-skimmed milk
  • pinch salt

Cooking Instructions

  1. Preheat the oven to 200C, 400F, Gas Mark 6. Make the Yorkshire pudding batter by whisking the flour, eggs and a little milk to a thick paste, add the remaining milk and whisk to a creamy batter. Allow to stand for 30 minutes.
  2. Preheat a non-stick frying pan until hot. Add the sausages and dry-fry until lightly browned.
  3. Pour the batter over the sausages and place in a preheated oven for 25 minutes. Do not open the oven as this will result in the pudding collapsing before it is fully cooked and the egg has set.
  4. When cooked remove from the oven and serve hot with a selection of seasonal vegetables and additional gravy.

Tips

Make the batter 30 minutes in advance and allow to stand. Semi-skimmed and skimmed milk give a much lighter pudding than full-fat milk.
